Homemade Split Pea and Ham Soup





8 cups water
1 lb dried split peas, rinsed
Heat water and peas to a boil in large "soup pot". Boil for 2 minutes. Remove from heat. Cover and let stand for 1 hour.

1 Ham Bone
1 onion chopped (1/2-1 cup)
2 cups water
1 tsp. salt
pepper 

Add the ham bone, onion, water, salt and pepper to peas. Heat to boiling. Cover with lid but "crack it". Meaning, don't put the cover on tight. Simmer for about 1 hour. (longer is okay)

Remove ham bone. Set aside on plate or cutting board to cool so that in a bit you can remove the meat from it. 

Add to peas in pot:
1 cup carrots, cut up
1 cup celery, cut up
(if you have more or less of any of these ingredients -go with it. It will still turn out.)

When your ham is cool enough to handle. Find and cut up all the meat off the bone into small pieces. Add to soup. 

Simmer for 45 minutes or all day!

I double this soup and it all fits in my large stock pot.
