Shopping List~
1 lb ground beef, 1 lb pork sausage, minced garlic, 2 cans (14.5) diced tomatoes, 2 cans (6 oz) tomato paste, dried parsley, dried basil, dried oregano, 3 cups cottage cheese, 2 eggs, grated Parmesan cheese, 4 cups (approx. 1 lb.) shredded mozzarella, 8 lasagna noodles

Here's how to make it:
1 lb ground beef
1 lb pork sausage
2 tsp. (heaping) minced garlic
Sauce Ingredients:
2 cans (14.5 oz) diced tomatoes
2 cans (6 oz) tomato paste
2 Tbsp dried parsley
2 Tbsp dried basil
1/2 Tbsp dried oregano
1. Brown ground beef and pork sausage with garlic. Drain off fat. Add the "sauce" ingredients. Simmer this for about an hour.
2. While that simmers- Cook 8 Lasagna noodles. Drain and lay out to "dry"' either on towels or on the colander.
3. Mix up in a bowl:
3 cups cottage cheese
2 eggs
1/2 cup grated Parmesan cheese
2 Tbsp. dried parsley
Spray a 9x13 pan with non stick cooking spray. Layer:
4 noodles on the bottom
1/2 cottage cheese mixture
1/2 of your mozzarella cheese
1/2 meat sauce
repeat...noodles, cottage cheese, mozzarella, meat sauce...sprinkle with a little extra Parmesan and mozzarella cheese if you have it and want to.
Bake 350 degrees covered with foil for about 35-45 minutes. Remove foil bake an additional 10-15 minutes. Let stand 10-15 minutes before serving.
*I have tried to double this and it became really a huge amount to work with making the sauce. If I wanted 2 lasagna's I'd make everything side by side (separate pots).
This recipe is adapted from Pioneer Woman's The Best Lasagna Ever Recipe...it is THE BEST but I had to make it my own for my family.
